Searching for '*' in the search api returns 0 results
This request should return all jpg assets but returns 0 results. (this used to work, but doesn't work anymore)
Any ideas?

The Dropbox API search functionality does not support searching by a wildcard like this, but I'll pass this along as a feature request. I can't promise if or when that might be implemented though.
I can't speak to if/why that query might have done what you wanted before, but this was not officially supported or documented.
