I'm a bit confused about what kind of upload speed I should expect from Dropbox. My internet connection here in the UK is 270Mb down and 26Mb up. Speed tests via a variety of sites confirm that I am getting these speeds. I mostly deal with quite small file sizes and these synch instantaneously. However, when I try to upload a 10GB video file to Dropbox, it takes literally several hours. Is this correct for the size of file I am uploading and the upload speed I have?

If you're using the Dropbox application to sync your files on your computer, there's a lot more happening behind the scenes than a simple upload. You can't easily compare that to an upload on other sites. Each file that syncs is hashed, compressed, then transferred, encrypted, and stored on the Dropbox servers. That entire process adds time to the "upload" process that you see.
