New changes in the online-only files, after the MacOS update.
Are there any plans to patch the Mac desktop issues that have been prevalent since Ventura or have Dropbox effectively stopped supporting Mac? It's a significantly worse product than it was two years...

I believe that you're referring to the expected changes with Dropbox for macOS on File Provider, is that correct?
In that case, there's not much that can be done about automatically making files online. But you can definitely use these steps in order to manually change the status of the files/folders.
You mentioned that you have issues cancelling the download of online files and folders. Would you mind clarifying a bit more on that, please?

I'm referring to the desktop app, I guess that's the file provider reading the link you sent. The problem is it does it whether I'm low on disk space or not, and the choice of files is entirely random – it wouldn't be quite so bad if it offloaded ones that hadn't been accessed for a long time but that's not the case. When you say 'not much can be done about it', why is that? It's a substantial issue that I would have thought Dropbox would want to address.
The other issues, that if you accidentally click on a folder to make it's content available offline, you used to be able to cancel it when it was underway but now you can't (when I say 'now', I mean since the Ventura update). As I mentioned, I deal with some huge files and a folder of these can contained numerous gigabytes of data.
