Yes, you can do this. You can move and even rename any shared folder within your account and it won't affect any other collaborator. I do this exact thing. I have a folder called Shared and I move all shared folders into it.

To add to what Rich says, I do exactly the same thing, however, just a word of warning when doing it Dropbox will show you leaving/deleting and adding shared folders etc. Dont panic and just let it do it and all will work out :)
