In regards to how Dropbox keeps your files secure, you can always have a look into the relevant Help Center article.
However, it seems your question isn't exactly Dropbox-specific, but should be mostly targeted on Microsoft's end. I did some research and I was able to locate this, which might help.

Thank you for that. I have been searching bot Dropbox and MS support for clarity, but I can not find the detail I need, which is whether or not the files are encrypted while being transferred from Dropbox to Sharepoint using this connector. I am using the connector you linked to, but that does not provide any information with regard to the actual transfer process. Searching on the web has not revealed any answer either.
I contacted Dropbox support as I presume (until someone can show otherwise), that Dropbox have built the connector you linked to and which I am using, and thus are the appropriate people to ask if it uses encryption while transferring the files in the cloud.
I hope that makes sense.

It's more likely that Microsoft created it and is just using the Dropbox API. You'll want to direct your questions about it to Microsoft.
