Hey there Dey1 - thanks for using Dropbox and welcome to the Community!
You can quit the desktop app by clicking on the app's icon in your menu bar and then selecting the quit option after you click on your account's profile pic and if you like you can also pause syncing.

Thank you Walter. Now that I have quit the app, the Dropbox Menu Bar icon has disappeared. How to I start Dropbox back up after my tests and return the Dropbox icon to the Menu Bar?

You should be able re-launch the app from the Applications folder in the sidebar of a Finder window Dey1
If you'd like to you can also add it to your Mac's dock for easy access.
