Nothing happens to your files when your subscription expires. At most, if you're over your storage quota when your subscription expires you simply won't be able to sync your files, but they'll remain accessible through the Dropbox website. Your files are not deleted or removed from the account.
If you're no longer seeing your files, something else is the cause.

If I cancel my monthly payment for extra dropbox storage, will I loose all my photos and videos I have saved on there allready? How does it work when you cancel? Do I need to transfer everything off there before cancelling? Anyones help and knowledge would be appreciated.

How does it work when you cancel?If you cancel your account will revert back to the amount of space you had prior to upgrading (2GB by default). If you have more than 2GB of files at that time, Dropbox will start to warn you about being over your quota. If you remain over your quota for an extended period, Dropbox may start to remove files, starting with the newest, to get you back below your quota.
If you're not over your quota after you downgrade, nothing will happen to your files provided that your account stays active (sign in at least once a year). If the account goes idle for more than a year, the account and files will be deleted due to inactivity.
