I deleted my Gmail account, and now I can't access Dropbox because it sends an email there
I have an old Gmail account that I deleted and can no longer access.
When I try to login to my Dropbox account, it sends a code to that email address.
I know the password, can't receive the code ...

No, because I deleted the Gmail Account a few years ago and they don't recycle Gmail accounts, nor can they recover deleted accounts apart from ones recently deleted.
No devices. Not used in at least 8 years...

Haven't logged into the Dropbox account in at least 8 years. I've gone through a few devices since then.

If you haven't accessed the Dropbox account for more than 12 months, then it should've been deactivated due to inactivity.
However, I’d recommend getting in contact with our support team directly to look into this matter in more detail.
You can do this by opening an incognito/private browsing window, while not signed into your account, and accessing this link.
From there you should be able to contact support. Make sure to pick an email to which you can receive and send emails from.
